Banana Coconut Trail Balls

The no-bake recipe for the days when you don't want to turn the oven on. Four ingredients, one bowl, and a tray full of bite-sized energy balls that travel in a backpack, fit in your hand, and disappear faster than you can say "good girl." Made for summer adventures big and small.

Ingredients

  • 1 ripe banana, mashed
  • 1 cup rolled oats
  • 2 tablespoons unsweetened shredded coconut
  • 1 tablespoon peanut butter (xylitol-free)

How to make them

  1. In a bowl, combine the mashed banana, rolled oats, shredded coconut, and peanut butter. Mix until everything holds together in a slightly sticky dough.
  2. Form into small bite-sized balls using your hands or a small scoop.
  3. Place on a tray or plate lined with parchment paper.
  4. Refrigerate for at least 30 minutes to firm up before serving.
Keep them happy
Store in an airtight container in the refrigerator for up to a week. For extra coconut flavor, roll the finished balls in a little extra shredded coconut before chilling. Always check your peanut butter label — xylitol is toxic to dogs and is hiding in some "natural" peanut butters too, so read carefully.
